What I've Been Up to this Spring

I'm a camera card clearer procrastinator, so I realized I had pictures that I have never put up anywhere!

Change in URL Address

I've decided to change my web address to match my blog title!

A Crockpot Kind of Night: Brown Sugar & Balsamic Glazed Pork

I usually babysit on Thursdays, (although it's not even fair that I get paid to cuddle with a sweet baby girl or play cars with an awesome 3 year old) so I like to cook dinner in the crockpot on those nights.
This recipe required very minimal/easy morning prep and before serving it only needs a quick glaze.

Brown Sugar & Balsamic Glazed Pork Loin
Ingredients:
1 (2 pound) boneless pork tenderloin (or regular pork loin)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water

Glaze
1/2 cup brown sugar
1 tablespoon cornstarch (I needed a touch more in order to thicken)
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce

Directions:
Combine sage, salt, pepper and garlic. Rub over roast. Place in slow cooker with 1/2 cup water. Cook on low for 6-8 hours. About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times during the last hour of cooking. Serve with remaining glaze on the side.

I added some squash-zucchini-onions on the side and called it dinner!

Lacy & Wes' Wedding Shower

Last Saturday was Lacy and Wes' Couple's Wedding Shower. {That sentence really tested my apostrophe skills..hope I got it right}  It was fun to get with the speech girls since we've been traveling this semester.  I love any reason for a party, especially to celebrate such a fun couple!

Red Stamp. My New Favorite App.

Now I know I'm new to team IPhone so this may be old news... But my current app obsession is Red Stamp. It combines 2 of my favorite things: holidays and mail! Basically it's a free app where you can design you own greeting cards (with pictures, or without) and text/email/snail mail them. It's free to text and email and only $1.99 to mail it as a postcard. Hello it's cheaper than buying a regular card and stamp!
Here are the 2 I've sent so far...
I can't wait for more occasions to send more! {sorry to my friends if you start to recieve too many of these--I can't resist!}

Super Bowl Recipes

The Super Bowl would be so much better if my beloved Colts were playing...but having another Manning brother playing is probably my second choice.  If Peyton can't win in his own stadium at least Eli can!  Please, I don't know if I can handle hearing about how 'great' Tom Brady/Bill Belichick are for a whole year...

I'm not sure where I'll be watching the Super Bowl.  But wherever I am, some good snacky food is a guarantee.  I picked out a few recipes to make for Sunday

Make my day Tuesday

On Tuesday I got back to Columbia to find 2 little surprises in the mail.


Grandma Nancy sent me a sweet card and a Colts article. I hope I can be like Grandma and send friends little things, just because it made me think of them. She is great at this!
Elisabeth sent some cute note cards because they match my current blog design.  So sweet!

One of my students at school insisted that she put a smiley face sticker on my hand. Guess she thought I did a good job?! I have so much fun on my Mondays and Tuesdays at the elementary school.  The kids keeps me laughing and are sweet as can be.
