Garnet and Black---Back to Back!

Columbia has been a rocking place to live this week...  Last night our Gamecocks won the College World Series for the second year in a row!!  It was so fun to watch all week except the heart failure they gave me almost every single night as it went into extra innings.  
And since my blood also runs garnet and gold, beating the Florida Gators was the cherry on top!

There will be a parade at high noon on Saturday--but I will be someone wayyy more important!  It's Elisabeth's wedding weekend!  I'm currently packing bags for: 1) the hotel 2) the wedding day/night 3) post wedding activities and 4) the beach next week.  Let's hope I don't forget anything! :)

A Year Ago Today....

My oldest sister and BIL got married!  And we had a BLAST celebrating their special day :)

It also happens to be a year since I met a very handsome groomsman.  {It was kind of a 're-meeting' because I don't consider a 14 yr old meeting a college student as a real meeting}

You know you've had a busy week when....

~You get your car washed on your lunch break and paint  your nails in the (outside) waiting area.  Multitasking at its finest.
~You get out of class 30 minutes early and think you've won the lottery.
~You write very basic tasks on you to do list so you don't forget, like: pack lunch, vacuum bedroom, put away laundry, etc.
~You have 25 pages left in your book but can't find the spare time to finish it.
~Cereal is an acceptable dinner.

This weekend will be the first time I haven't packed a suitcase and left Columbia in approximately 8 weeks. Dang...8 weeks!?!   Next weekend I'm excited to help with 'Operation Put The Finishing Touches On My Sister's Wedding'.   So this weekend I have no plans other than to do all my school projects.  And I think my poor little car will enjoy the break, as will I!

Beach Snacks

Last Thursday night my roommate and I were planning to go on separate beach trips for the weekend.  We bought 2 big bags of pretzels to make some snacks.  Spicy Pretzels {My sister Nancy's recipe} and Kiss Pretzels {Emily Ann's recipe}

Spicy Pretzels
1 bag mini pretzels twists
1/3 cup vegetable oil
1 packet ranch dressing seasoning
1 tsp-1 tbsp cayenne pepper

Mix pretzels and oil in a large bowl until coated.  Add in ranch seasoning and as much (or little) cayenne pepper as you would like!  Let them sit a little bit, they don't look like anything much but they are a great beach/boat snack!

1 bag mini pretzel twists
Hershey kisses, Hugs, or Rolos
M&Ms

Lay out pretzels on a baking sheet lined with wax paper.  Put kiss, hug, or rolo on top of each pretzel and cook for 7 minutes in a 200 degree oven.  Once you take them out immediately press in the M&Ms. Chill in the fridge.
*Make sure not to cook them too long or the chocolate will get powdery
*I keep them in the fridge, I think they're better cold!

Girl's Trip(s)

Before I came back to school I got to spend some time with the girls.  We spent a few days at Kiawah and then the next week we were on to Lake Murray.  
At Kiawah we laid by the pool, relaxed at the beach in the afternoons, and celebrated Hannah's 19th Birthday at night.

Then at Caitlyn's we jet skiied on the lake, laid out on the dock, and took the boat to a local dinner spot on Lake Murray.  

{Funny Story: after a trip to Aruba Caitlyn's mom (Chryl) saw a banana boat and told her husband (Tom) that'd be fun to get for the lake.  Wellll Tom couldn't find one, so he got her a hot dog instead which Chryl did not think was acceptable--nonetheless it is now at the lake and we took full advantage!}

It was such a great way to wrap up the beginning of summer before I moved back to Columbia, Caitlyn went to NYC, Hannah started classes, and Catherine started all her vacations.
It's so weird to look at the picture of all of us with Grace (Caitlyn's sister who's in 4th grade) and think we were friends at that age!

BBQ Chicken Pizza

This is such a quick and easy dinner (okay everything I make is easy)  I couldn't help but share!  


Ingredients:
1 pre-baked whole wheat pizza crust 
½ cup BBQ sauce
2 cups chopped or shredded cooked chicken breast
½ cup shredded cheddar cheese (I used part-skim)
½ cup shredded part-skim mozzarella cheese
1 bell pepper, sliced (I used red)
Olive oil
Chopped fresh cilantro and scallions 

Directions: 
Preheat oven to 400°F. Place pizza crust on a baking sheet lined with aluminum foil. Top crust with bbq sauce, chicken, cheese, and peppers. Drizzle lightly with olive oil, transfer to oven and bake for 15-20 minutes or until cheese is melted and bubbly. Sprinkle with chopped cilantro and scallions.

One Month From Today....

is the Beebe Bash of the Year!!!

I cannot wait for the almost week long wedding festivities--it's going to be a great one!
I really want to show one of Elisabeth's bridal portrait pics..but she wouldn't be very happy.  Oh and did I mention she is wearing my Grandma's wedding dress?  Can't wait to see her walk down the aisle :)

Beebe Bashes have taken on a whole new meaning...
They started out as a way to celebrate all the cousin birthdays on my Dad's side (there are 18 Beebe cousins).  So we combined the seasons and did 4 parties a year. 
Then the Bash transformed into a swim team party where each summer Mom and Dad would invite 150+ people to our house after a swim meet.
But most recently The Beebe Bash has meant a wedding!  Last summer my sister Nancy got married, and this summer it's Elisabeth's turn.

Lessons I've Learned This Week..

...and it's only Wednesday.

~Always pay your parking meter or you WILL get a parking ticket (even if you're only gone for 15 minutes)

~ The beginning of June in Columbia heat and humidity is not the time to start a running plan....I guess I will have to get used to waking up before the sun. 

~I tried putting guacamole on my sandwich instead of mayo = 2 thumbs up! Trust me, try it.

~Summer classes won't be that bad, they're only 8 weeks, they're only 8 weeks, they're only 8 weeks...

~Never get gas at the pump on campus unless you have 45 minutes to dedicate to the experience.
My brother offered to drive my car to fill it up and after exactly 1 minute of pumping we got TWO TENTHS OF A GALLON. Seriously???
