 Tonight is my last day as a 21 year old!  Looking back on the past year...it's been a great one!

Date Night and Playdate

Last Tuesday I went on a dinner and a movie date...with an 11 year old :)  Grace is my friend's little sister and I love hanging with her.  Grace and I went to see Cars 2 and ate Chick Fil A in the theater (rebels).  It was cute and we had a blast!


But during the previews I 2 noitced things:
1) The new Spy Kids movie (I've never seen any of them) but in the 4th one the main character wears a hearing aid!  As a nerdy SLP student I thought this was pretty cool to see in the media!

2) The Lion King 3D is coming to theaters in the Fall!!  This was my favorite movie growing up... I know where I'll be on September 16th!

Then on Wednesday I went to my standing weekly playdate with Fin.  I swear I spend the whole time laughing at all the funny things he says or does!  This week was pretending to dip his hot dogs into his applesauce instead of the ketchup.  He thought it was hilarious to sike me out on every single bite!

What to do when it's 150 degrees outside

yes it's almost 11PM and it's still 95degrees.

The drive in was fun...the movie and the heat were okay.  The movie obviously didn't start until dark (aka 9PM) and they played 2 movies.  The first one wasn't over until almost 11:30 so we ditched before the second started.  I definitely want to go back in the fall when it's cooler and the movies start earlier!!

-Do a progressive dinner through The Vista

Charleston Weekend

Every Sunday when I get back to Columbia I vow I won't go to Charleston that weekend.  However 90% of the time I get a phone call or text about something going on in Charleston that I don't want to miss---so the bag gets packed and the car gets filled up with gas again for the all to familiar 100 mile trip that I could navigate in my sleep!

This past weekend was Catherine's 21 Birthday Celebrate. How could I miss that?!  We met at Santi's for dinner.  {The best mexican food in the Charleston area...if you live close go!! The scenery is nothing to write home about aka in an old waffle house but the food is delish!}  Then went to East Bay for a few drinks.  I am reminded every time I go downtown why I love it so much!






Saturday morning Doug and I went to grab brunch at another favorite spot, Caviar and Bananas {weird name, awesome food}  Then wandered over to the Farmer's Market in Marion Square.  Reasons #4837282 and 4837283 why I love CHS.

 It's pretty bad that I only took pictures of food and not of us or the farmers market...oh well. 
Saturday and Sunday afternoon were supposed to be spent at Kiawah...but we both caught the post wedding illness aka colds and strep.  So instead we hung out with my fam and watched the British Open/World Cup.
So now I'm back in Columbia making a rule that I won't think about weekend plans til Wednesday and I'm not driving anywhere this weekend! We shall see :)

Baby Thompson & Chicken Lasagna Recipe

On Friday afternoon I went to see Vanessa and Baby Trey.  Trey was born wedding weekend so he just celebrated his 2 week birthday!  He has changed so much in 2 weeks...

Vanessa lived with Caitlyn's family for a while and we've been friends for years.  I remember her first date with her husband, then when they got married, she graduated, and now they have a precious baby boy!  Thanks so much for letting me come over and love on Baby Trey--he is precious

I've been wanting to try some freezer meals so I figured this would be a perfect time.  However Vanessa cooks for a living...so what do you make for someone who is good at cooking everything??  I tried the Chicken Lasagna from over at {Love My Freezer Dinners}  It was so easy and the chef herself asked me for the recipe! haha  I also made some Banana Bread (and a few handfuls of chocolate chips just happen to jump into the batter)

Chicken Lasagna
8oz package Lasagna Noodles, cooked 
1 Can Cream of Chicken Soup 
1 Can Cream of Mushroom Soup 
8oz Sour Cream 
1 Cup Parmesan Cheese, shredded 
½ Cup Onion, Chopped (minced onion will do) 
½ teaspoon Garlic Salt or Powder 
4 Cups Chicken, cooked and cut up *I used rotis chicken
16oz Cheddar Cheese, shredded 

Mix Soups, Sour Cream, Parmesan Cheese, Onion, and Garlic Salt/Powder together. 
Place layer of Noodles in bottom of greased 9x13 pan. Place ½ of sauce mixture on top of noodles followed by ½ of Chicken and 1/3 of Cheddar Cheese. 
Repeat another layer of above. 


Freezer Instructions: Use heavy duty foil to cover. Layer a couple times to avoid freezer burn. 

Cooking Instructions: Thaw. Bake at 350 degrees for 30 minutes, covered. Remove cover and add remaining cheese, bake an additional 15 minutes.

I LOVE that 2 of my classes ended so I have some free time.  {hence the increase in blogging}

I LOVE that it's Catherine's 21st Birthday!  Love you Cathy and can't wait for our NYC trip :)


I LOVE that I went on my Couch to 5K run tonight since I slept in this morning.  Robert was my trainer/motivator and gave me some great running tips AND I ran up the biggest hill in the neighborhood that I thought I for sure I couldn't do. Baby steps.

I LOVE that the US Women's World Cup game is on today.  After a few tears after the crazy game on Sunday I'm excited to watch them today
